Tasting note
The aroma of the wine has many redberry components of strawberries and raspberries as well as fine vanilla and elegant roasted notes that come from oak aging. On the palate, fine fruity Pinot notes paired with a potpourri of spicy aromas. Lots of enamel, very soft and elegantly integrated tannins. The juicy acidity complements the overall impression and ensures freshness, right down to the long-lasting finish.
Culinary recommendation
Goes well with Graubünden specialities such as capuns, maluns and dishes with white veal and pork meat.
Vinification
From the Maienfeld vineyard lime kiln. In the wine cellar, the grapes complete a so-called whole grape fermentation process. This means that the berries are not separated from the stalk, but they ferment completely without being crushed. Only after about 2/3 of fermentation are they trampled on in the traditional way so as not to injure any seeds as possible. Once the mash has fermented after approx. 4 more days, it is gently pressed and then filled into French barriques. In these barriques, the wine rests and matures until spring. Just like in earlier times, when it slowly gets warmer outside, the Pinot Noir lime kiln begins its second fermentation and then spends another 12 months in the barriques.
