Tasting note
The Maienfeld selection is presented in a glass with a bright ruby red color, which reflects its youthful vitality. On the nose, a seductive bouquet of ripe cherries, red berries and delicate floral notes unfolds, complemented by a touch of spices and fine oak wood spice. On the palate, the wine is silky and elegant, with a harmonious balance of fruit, acidity and fine-grained tannins. The juicy aromas of cherries and red berries continue and are complemented by fine nuances of dark chocolate, delicate smoke and subtle spicy notes. The gently integrated tannins give the wine a pleasant structure and accompany it into a long, smooth finish that lingers on for a long time.
Culinary recommendation
The Maienfelder Auslese harmonizes perfectly with Graubünden specialities and perfectly brings out the aromas of regional cuisine. It goes well with traditional capuns, whose spicy filling and delicate chard leaves are wonderfully complemented by its structure. It also shows its elegance with white meats, such as tender veal, and underlines fine roasted aromas and juicy textures. It goes particularly well with a classic Bündner Plattli, on which spicy mountain cheese and aromatic salt salt develop their full flavor.
Vinification
For this Pinot Noir, only the best and most beautiful grapes are carefully selected by hand. After harvesting, the mash remains cool for 3 to 5 days before open fermentation begins in traditional wooden vats. During fermentation, the mash is gently infused by hand once or twice a day. It is then gently pressed before the wine matures for 12 months in French barriques, of which around 30% consist of new wood. This complex process gives it particular depth, structure and elegance.
