About the wine
The San Valentino winery is located on a hill near Rimini. It has been managed biodynamically by Roberto Mascarin since 1997 and the star oenologist from Italy, Luca D'Attoma, has been advising him since 2016. His Terra di Covignano is considered one of the best Sangioveses in Italy and was awarded three glasses by Gambero Rosso.

Tasting note
Intense garnet red, complex nose with aromas of ripe blueberries and blackberries, plus plums, violets, spices and chocolate. Powerful palate with ripe, soft tannins. Expressive cabernet franc with lots of fruit and dark chocolate on the long finish.

Vinification
Selective, gentle hand picking in small baskets. Gentle destemming and squeezing of ripe berries. Temperature-controlled maceration with wild yeasts takes place over eight days. Malolactic fermentation in stainless steel tanks. Aging for 18 to 20 months in 60% new and 40% used French oak barrels.
