About the wine
Lou Coucardié is at the heart of Michel Gassier's work as a winemaker. He was named after the regional bull - a noble opponent who follows people through the streets in accordance with historical traditions (not the other way around). The wine is graceful and powerful, just like the ideal of its breed.

Tasting note
Its dark, almost black color heralds a wine of great concentration. Powerful and extremely complex, it shows a wide range of aromas such as dark berries, spices, eucalyptus and vanilla in great harmony. Rich and velvety, with fresh fruit and ripe tannins without being heavy.
Culinary recommendation
Flaschenpost team is recommended for game, roasted vegetables and barbecues. Our recommendation: The organic red wine tastes best at slightly chilled 15°-18°C. The wine should be enjoyed during this period: 2016 - 2022.
Vinification
Selection of very calcareous plots and old vines with naturally low yields. Manual harvest with sorting, sometimes with undestemmed grapes (30%). Mash before fermentation at low temperatures and with manual immersion of the pomace (pigeage). Malolactic fermentation in barriques (2nd occupancy). Ageing on yeast for 12 to 18 months. Bottling without filtration.
