Culinary recommendation
Goes well with Asian dishes.
Vinification
The grapes come from Elgin, which are grown on Rosenqartz soils, and were harvested at optimal ripeness and pressed whole, slowly extracting the juice. The juice was settled for 48 hours and bottled in used Burgundian barriques and concrete eggs for fermentation and maturation. The wine was left on the yeast with regular “batonnage” for 10 months.
