About the wine
Graceful and fertile landscapes of the coastal region give us these grapes, from which the winemaker from the South African winery Ridgeback conjures up this red wine with refinement and experience. If we can offer something special for Christmas 2021, it is this dominant red wine 2018 — Lion Hound Shiraz. The Flaschenpöstler promise a culinary experience when you serve this Shiraz with game or barbecue.

Tasting note
Intense notes of juicy dark cherry, cracked black pepper and a touch of licorice flow seamlessly into a silky palate and an elegantly savory finish.
Culinary recommendation
Ideal with grilled or braised beef, spicy lamb, BBQ dishes, game, hearty stews and mature hard cheese.
Vinification
The perfectly ripe Shiraz grapes were crushed and only slightly crushed to prevent damage to the pips. They were fermented in an open stainless steel fermenter. The fermentation took place at 24-28 degrees Celsius using a commercial yeast strain that was suitable for the variety. A 30% berry component ensured gentle extraction during pumping, which was carried out 3-4 times a day. The wine was removed from the skins before complete drying to maintain softness. After gentle pressing, the wine was malolactically fermented. Some of the wine was aged on oak bars, while the rest was aged for 12 months in third and fourth barrels to ensure good integration of wood and fruit. The wine was blended and lightly filtered just before bottling.
