Tasting note
Das bleibt im Gedächtnis: Sein beispielloses Granatrot erfreut zuerst das Auge und im Anschluss den Geist. Mit schlankem Körper und markanter Säure zeigt dieser Weisswein seine makellose Qualität.
Culinary recommendation
Goes well with duck liver, fish from the lake and river (char, trout, pike, zander, whitefish), crustaceans, poultry, cheese.
Vinification
Dry blend of Petite Arvine and Païen (Savagnin) grapes. Single vineyard selection of old vines with low yields which grow on the best plots of Valais. The ripeness of the grapes is constantly monitored shortly before harvesting in order to determine the optimal harvest time. The harvest amount is strictly limited to guarantee the highest quality. The harvest is picked by hand and sorted out to keep only the best berries. All grapes are gently pressed - only the heartpiece is used for this cuvée. After a natural clarification and a slow one. The wine is alcoholic fermentation on fine yeast in oak barrels expanded over approximately 10 months. A slight filtration takes place before filling.
