Tasting note
The “le Plateau” shines in a deep ruby red with violet reflections. On the nose, aromas of ripe blackberries, cherries, plums, sweet spices, leather, rose petals and some graphite inspire. On the palate, the wine is rich, dense and meaty, with lots of dark fruit aromas, a pleasant spiciness, velvety tannins and remarkable freshness. A muscular Bordeaux that is great fun even at a young age but also has great aging potential. The famous wine critic Antonio Galloni from www.vinous.com rates the current 2019 vintage with 94/100 points.
Culinary recommendation
Goes well with hearty meat dishes, beef fillet, stews, game, mushroom dishes and cheese.
Vinification
Following the example of noble Burgundians, Dufort-Vivens began to create single-layer bottlings of their individual plots in 2019 in addition to their famous Grand Vin. This resulted in three different cuvées. The “Les Plantes”, the “Le Hameau” and the “Plateau”. Each of these wines represents a facet of Dufort-Viviens' DNA: Les Plantes stands for freshness, le Hameau for elegance and le Plateau for strength. The vines for the “le Plateau”, which are on average 25 years old, grow on a plateau on the Soussans plateau in Margaux. The soils consist primarily of sand and deep gravel. All vines are cultivated according to organic guidelines. After manual harvesting, the grapes are fermented with natural yeasts. The aging of 16 months takes place 2/3 in clay vessels and 1/3 in barriques, using only approx. 10% virgin wood.
