Tasting note
A so-called blanc de noirs made from 100% Pinot Noir. Some of the base wine matures in wood and no biological acid degradation has been carried out. The nose features aromas of red berries, ripe apples, pomegranates and citrus fruits, spiced with notes of biscuits, cherry stones and tobacco, plus a fine mineral touch. On the palate, with good pressure, juicy fruit, again subtly iodized minerals and a lively acid structure.
Culinary recommendation
A wonderful accompaniment to flamed mackerel with cucumber and apple, or to grilled pumpkin with apple balsamic and spicy sour cream, but also to poultry, plus tabbouleh with pomegranate seeds.
