About the wine

1989 was a turning year anyway, even in Priory! Excited and excited, against the trend, Alvaro Palacios, René Barbier and of course: Daphne Glorian buy old steep slopes near Grattalops. Vinification
Very selective reading by hand. Separate vinification of the layers. Fermentation with vineyard yeasts in barrels and concrete tanks, aging for 18 months in used small and large oak barrels, wooden tanks (2000l), cement tanks (2000l), clay amphoras (700l). No fining or filtration.
