Tasting note
Deep yellow with a brilliant glow. Compact, spicy and balsamic on the nose — notes of anise, eucalyptus, subtle smoke and toast nuances. Oily and creamy on the palate, strong and elegant, with a smooth texture, ripe stone fruit, balanced acidity, mineral freshness and a long, vibrant finish
Culinary recommendation
Goes well with fish, seafood, soft cheeses, desserts, poultry, veal, pork.
Vinification
Alcoholic fermentation in French oak barrels (500 l & 228 l), partly malolactic fermentation. Then aged on fine yeast with bâtonnage for 11 months and further storage in stainless steel tanks for around 5 months
