Tasting note
Straw yellow with greenish reflections. Fine, very uniform perlage. Intensely scented of apple, ripe pear and apricot on the nose. This is accompanied by floral notes. Subtle nasal sweetness Rich, full on the palate, but never out of harmony. Fresh and sweet and fruity at the start. Persistent and fine mousse. The aftertaste is fragrant, floral, almost exotic. A treat for the palate.
Culinary recommendation
Goes well with sweet pastries and fruit cakes.
Vinification
The pride of the winery. A special cru from a selected small Col San Martino vineyard. After maceration, the grapes are gently pressed. The resulting must is fermented directly for around 60 days in autoclaves - pressure-tight steel tanks - at 13 to 14 degrees Celsius.
