Tasting note
This cuvée also consists of a good 2/3 Meunier, plus Chardonnay and a very small portion of Pinot Noir, aged in steel tanks. The champagne stays on the yeast for at least 24 months before disgorgement. The bouquet shows aromas of pears, red berries, morels and blooming meadow herbs accompanied by spicy notes of roasted nuts and fresh bread dough. Round and balanced on the palate, with a delicately bitter, drinking-stimulating note in the finale.
Culinary recommendation
Great for an aperitif, but also a great accompaniment to delicious starters, such as tender-confit char with pear-fennel broth, or an hour egg with bacon potato espuma and nut butter, but also with white meat and poultry.
