L'Ultime 2021 - Domaine Stéphan

L'Ultime is the result of Jean-Michel Stephans (co-founder of France's Natural Wine Movement) decades of experience and his lifelong pursuit of his vision: producing flawless wines without any additives such as SO2, etc. that radiate a particular balance and energy. This cuvée smells intensely of raspberry drops, blueberry jam, cassis liqueur and liquorice. On the palate, it is slim and with somewhat rustic tannins, which give it its backbone. Dark, slightly tart aromas reminiscent of sloe and matches, accompanied by fine astringency. A poem about rack of lamb, turkey with cranberry sauce or beetroot carpaccio with hazelnut oil. We recommend carafing the wine or opening it a few hours before drinking.
