Tasting note
A novelty by Stéphane Erissé, a single-varietal Cabernet Sauvignon from a small location that he was able to acquire. Stéphane also uses gentle extraction for this wine. The grapes are destemmed and fermented with a large proportion of whole berries for up to three weeks. Showing wonderful varietal typicity, dark berries, some cassis, fine herb seasoning and a touch of grilled red pepper. With rich but well-integrated, fine tannins.
Culinary recommendation
Goes well with slightly stronger dishes, such as French specialties such as rillette, or the “Cassoulet” bean stew, spicy mushroom pan, but also grilled meat and game dishes.
