Vinification
Block 30 is located in a secluded little valley on the edge of a lake at the L'Avenir winery and benefits from the cooling effect of the breeze that sweeps across the water. The homogeneous, barren soils limit the vitality of the vines and ensure balanced development. The combination of a unique microclimate, moderate growth and old vines produces small grapes with small berries and concentrated taste. The 2021 vintage in Stellenbosch was moderate, without heat spikes or rain and was in many ways similar to the celebrated vintage of 2017. After five hours of skin contact, fermentation began in temperature-controlled stainless steel tanks. The wine was then transferred into large French oak barrels filled first or third and left on the fine lees for 14 months. There was regular battonage to naturally improve the complexity and mouthfeel of the wine.
