The Kleine Zalze Family Reserve Chardonnay 2023 is pressed from two plots of vineyards in Stellenbosch, which reflect the diversity of the terroir in the Cape's most famous appellation. One part comes from Banghoek, while the other part is grown in the Sir Lowry's Pass region in Somerset-West. The inclusion of Chardonnay in the top Family Reserve category underlines the status of Kleine Zalze's entire wine portfolio, as this wine is an excellent example of the world-class Chardonnays that South Africa and Stellenbosch in particular have to offer. The various blocks used to produce this wine were harvested separately by hand at a maturity level of between 21° and 23° Qechsle. Some of the grapes were destemmed and pressed, and the resulting juice was in skin contact for 12 to 18 hours before settling. The other part was pressed whole to maintain optimal freshness and give the wine refinement and elegance. After a settling period of one day, the slightly cloudy juice was transferred to a stainless steel tank, where it was inoculated with selected slowly fermenting yeast strains. The juice was then immediately transferred by gravity into new 400-liter French oak barrels and 500-liter Italian terracotta barrels, where it sat on the yeast for eight months. The Chardonnay was bottled without fining filtration.
