Tasting note
A traditional but flirtatious MCC with flair that delights the palate as much as the eye. Delicate silver pink with vibrant cascading sparkle. Great aromas of cherries and red berries with elegant finesse and decadence notes on the palate.

A great sparkling wine that goes fantastically with desserts with strawberries or other berries.
Vinification
The average day and night temperatures increased the fruit acidity and grape quality of Chardonnay. The Chardonnay was planted in limestone-rich soils by Robertson. This made for a nice fruit expression. At Pinot Noir, the cold weather in October and November led to smaller berry sizes and better fruit concentration. The Pinot Noir was grown in cooler locations in False Bay, which contributed to the fresh acidity. The grapes were picked by hand in the cool dawn and pressed into whole bundles. Only the juice from the free range was used and each grape variety was vinified separately in stainless steel tanks. The MCC Rosé matured in the bottle on the lees for 18 months. After remuage, this sparkling wine was degoged and a dosage of 11 g/l was added.
