Tasting note
Color: Intense golden yellow with amber reflections reminiscent of winemaking in amphoras. Perfume: Elegant and complex, with aromatic notes of ripe fruit such as apricot and peach, floral nuances of chamomile and lime, accompanied by a mineral note and a touch of honey and beeswax. Taste: The palate is dry, full-bodied and round, with an enveloping structure and light tannins thanks to the maceration on the skins. It is characterized by its balanced freshness and distinctive minerality, which highlights the Tuscan terroir. The aftertaste is persistent, with an almond and citrus note that gives it depth and complexity.
Culinary recommendation
Goes well with delicious fish dishes such as cod cream, tuna tartare, seafood risotto and grilled white meat. It is also suitable as an accompaniment to medium-aged cheese and vegetarian dishes with pumpkin and fennel.
Vinification
Vinification takes place in amphorae, a method that allows gentle oxygenation and enriches the wine's aromatic profile. The grapes are briefly macerated on the skins, which gives them color and subtle tannins, followed by aging in amphorae, which preserves their freshness and aromatic complexity.
