Tasting note
Clear, dark shade of ruby red with beautiful brilliance. On the nose, fresh, fruity aromas and characteristic floral notes of peonies as well as ripe red fruits such as wild strawberries, currants and raspberries. On the palate, the wine shows a lot of finesse with soft fruit aromas. Crisp aftertaste with good intensity and length, soft and fine tannins.
Vinification
The grapes are harvested by hand and, after light destemming and crushing, placed in open fermentation containers, where static maceration takes place until natural fermentation begins. During alcoholic fermentation, the pomace is submerged in a basket and pumped around regularly to control the temperature and extract the color and fruit from the grapes. After 8—12 days, the free juice is extracted and the remaining grapes are pressed to be mixed again later after tasting. The wine then undergoes malolactic fermentation and matures in oak barrels and tanks. During storage on fine yeast, the wine is protected and nourished before it is bottled. Protection and light diatomaceous earth filtration are carried out before bottling.
