About the wine
Alessandro Cellai is the boss of several prominent wineries, including the Azienda Castellare in Castellina (Chianti). As a balance, so to speak, and to maintain contact with the vines and wine in a very concrete way, he also runs a mini winery in Castellina. His latest creation is a blend of Cabernet Sauvignon and Merlot. The 1.5 ha of vines only fill a few barriques, because only 450 grams of grapes are allowed to ripen on each vine. Alessandro does the work of thinning the grapes personally and alone (on Sundays). Once in June, shortly after the flowering period, it removes all grapes that have not yet faded, then in August also those that would be ripe too early. In doing so, he delays the harvest time as long as possible: The longer the growing season, the more exciting the wine. The production is around 6000 bottles.
