The term “Haideboden” originally referred to the area east of Lake Neusiedl around the municipality of Frauenkirchen. In 1991, it was used for the first time as a name for the special cuvée of the Umathum winery. The grapes for this wine come from various vineyards west of Frauenkirchen, with each vineyard having different soils. Zweigelt grows on a soil of ferruginous pebbles, Blaufränkisch on calcareous soil and Cabernet Sauvignon on extremely barren soil. The vines are between 28 and 49 years old and are cultivated according to ecological principles. The wine is fermented in fermentation stands at a temperature of between 28 and 31 °C and kept in contact with the grape skins for up to three weeks. It then matures in small barrique oak barrels for over 20 months, with around a third of the barrels being new. On the nose, the wine has an aromatic scent of cherries and blackberries.
