Tasting note
A champagne that combines character and elegance. Composed of 65% Pinot Noir, 20% Meunier and 15% Chardonnay from Mareuil, Mutigny, Avenay, Épernay and Festigny locations. Cuvetted from 35% 2019, 40% 2018 and 25% reserve wines, aged in used barrels. No foreign sugar is added, but Fabrice only uses the fruit's own sugar (“M.F.P.” for FABRICE POUILLON METHOD) both for the tirage and for the dosage. The nose features aromas of vineyard peaches, quince jelly, red berries and apple-pear tart, plus some acacia honey and fine nut notes. Quite complex on the palate, yet round and balanced, with nice freshness, spice and good substance.

Goes well with ham croissants or a piece of quiche, various starters and fish.
