Tasting note
Cuvée of 70% Pinot Noir and 30% Chardonnay, each with the addition of reserve wines from the previous two years to the base wine. The base wines are aged for ten months in large wooden barrels of up to 5500 liters, and malolactic fermentation is suppressed. Good concentration in the bouquet, aromas of ripe pome fruit with a fine touch of red berries and cherries, plus bisque notes, toasted brioche and finely spicy minerality. On the palate with fine perlage, wonderfully intense and round, it has invigorating freshness and good structure.
Culinary recommendation
It goes well with an aperitif, but is also ideal with starters with raw fish, such as grouper tartare or scampi, also with poached fish or poultry, or with grilled vegetables.
