Tasting note
The light yellow Godello Blanco is complex on the nose with intense aromas of green apples, stone fruit, as well as a hint of citrus and fennel in the bouquet. This characterful and multi-faceted Merayo Godello is beautifully rounded and fresh on the palate, with citric and mineral notes.
Culinary recommendation
Goes well with sole, corn chicken, asparagus and young Manchego.
Vinification
In addition to Albariño, the Godello white wine variety is one of the best that the Iberian Peninsula has to offer. Despite the high quality, the grape variety is not widespread; in Spain it is just over 1000 ha, and the trend is rising. Clay-rich soils at around 600 meters above sea level form the basis for growing Godello grapes. Cold maceration for 24 hours, fermentation in steel tanks at a controlled temperature of 14-17°C. The young wine remains on the fine yeast for 4 months. The total production is just under 9000 bottles.
