Tasting note
Light straw yellow. On the nose, intense aroma of citrus, white and tropical fruits, balsamic notes of Mediterranean shrubs and a touch of iodine. Freshness and saltiness set the rhythm and underpin the aromatic, fruity and balsamic notes.
Culinary recommendation
Goes well with fish soup, crustaceans, stuffed pasta, fish dishes and creamy cheeses
Vinification
The grapes are cooled down to 10°C before they are destemmed and gently pressed. A small portion is left on the skins for 48 hours before fermentation begins. The wine then stays on the lees for at least 4 months.
