Tasting note
Powerful ruby. Concentrated, multi-layered nose. Aromas of ripe black currant, blackberry jam and blueberries. The fruitiness of the densely woven and complex nasal aromas is supported by a rich portion of roasted aromas; coffee, new wood, some tobacco and nuances of eucalyptus and black chocolate. Strong and robust on the palate. Robust tannins, juicy Cabernet acid and a texture with plenty of melting give the wine character. Long, aromatic aftertaste.
Culinary recommendation
A treat with pot roast, venison and aged cheese.
Vinification
The Cabernet Sauvignon grapes are strictly selected in the vineyard and fermented on the mash in stainless steel tanks after harvesting. The young wine then matures for 18 months in new and used French barriques (300 liters) and in the bottle for a further 12 months. The wine is dedicated to Rudi Bindella's daughter, Gioia.
