Ghost Gum white 2023 - Stony Brook

With the 2018 vintage, the Chardonnay component is undoubtedly the star. With 92% of the Chardonnay blend, Semillon only accounts for 8%. The idea is that after 5 or 6 years in the bottle, the Chardonnay becomes quieter and the wonderful secondary qualities of Semillon start to intensify. Both varieties were fermented in barrels and aged in 55% new oak — mainly in France. The Semillon was fermented and aged in Eastern European barrels. 60% of the wine was malolactically fermented in oak wood. All grapes for this wine were grown on the Stony Brook Estate. Light gold color with bright green. The Chardonnay component offers fresh citrus and butterscotch on the nose, while the Semillon adds richness and a touch of honeycomb to the palate. The oak is perfectly balanced and complements the fruit and natural structure of the wine. Due to the brightness and oak contact, this wine can age up to 10 years after harvest and change elegantly. Semillon will be in the foreground when the wine matures. A wonderful accompaniment to seafood or creamy pasta dishes.
