This single-vineyard Cabernet Sauvignon was pruned to produce extremely small quantities of exceptionally concentrated grapes. The grapes were harvested by hand when fully ripe before being cold soaked for 10 days. The wine was then fermented in stainless steel and transferred to 100% new French oak barrels for a total of 34 months. 2015 was a spectacular vintage for this wine. The nose is rich in dark cherries, blackberries, oak and toast. The rich wood content ranges from nose to palate, where there is a balance between concentration, flesh, acidity and solid tannins. The aftertaste is long, clean and tasty and requires a combination with a juicy meat dish. The wine has great potential for the winery and should continue to impress beyond 2035.
