About the wine
The attribute “Passito” refers to wines made from grapes that are dried in air or in the sun, almost to the point of ripening. In South Tyrol, this almost always happens in the vineyard, i.e. the grapes remain on the vine until the end of the year.

Tasting note
Intense golden yellow with brilliant and glowing reflections. Aromatic and enveloping, characterized by notes of ripe tropical fruits, lychee, yellow peach and pineapple, accompanied by nuances of honey, rose and sweet spices such as vanilla and cinnamon. Sweet and velvety, with a soft and enveloping structure, supported by a pleasant freshness. On the palate, rich notes of exotic fruits, candied citrus fruits and honey appear, with a long and harmonious finish that leaves a feeling of delicacy and refinement.
Culinary recommendation
Perfect in combination with fruit desserts, dry pastries, pies, blue cheese and pies. Also ideal pure as a meditation wine.
Vinification
The grapes are harvested manually and allowed to dry to concentrate sugar and aromas. The winemaking process is then carried out by slow fermentation at a controlled temperature. The refinement takes place partly in steel barrels and partly in small oak barrels and gives the bouquet complexity and finesse.
