Tasting note
Gavi is probably the most classic of Italian white wines and has recently also gained in importance again. It is a few ambitious young producers who produce incomparable wines with the traditional Cortese grape. The Castellari-Bergaglio family estate, in the heart of the best Gavi vineyards, comprises 10 ha of vines planted exclusively with Cortese. The high average age of the vines gives the wines a very unique expressiveness. The small but modern winery is perfectly equipped to produce wonderfully fresh white wine with a distinctive varietal character. His Rovereto Gavi di Gavi, obtained exclusively from vines over 80 years old, reaches exceptional dimensions. The aromas are expressive, very delicate and fresh. The richness of extract creates a perfect balance between lively acidity and round enamel.

Goes well with poultry, saltwater fish.
Vinification
Ein paar Worte zur Vinifikation: Gavi ist wohl der klassischste unter den italienischen Weissweinen und hat gerade jetzt wieder an Bedeutung gewonnen. Es sind ein paar ehrgeizige junge Produzenten, die mit der traditionellen Traube Cortese unvergleichliche Weine hervorbringen. Das Gut der Familie Castellari-Bergaglio, im Herzen der besten Gavi-Lagen, umfasst 10 ha Reben, ausschliesslich mit Cortese bepflanzt. Das hohe Durchschnittsalter der Reben gibt den Weinen eine ganz einzigartige Ausdruckskraft. Die kleine, aber moderne Kellerei ist perfekt eingerichtet, um herrlich frischen Weisswein mit ausgeprägtem Sortencharakter zu produzieren. Der Rovereto Gavi di Gavi, ausschliesslich aus über 80 Jahre alten Reben gewonnen, erreicht aussergewöhnliche Dimensionen, ohne an Feinheit und Frische einzubüssen. Der Reichtum an Extrakt schafft eine perfekte Balance zwischen der lebhaften Säure und dem runden Schmelz.
