The Ticino landscape is hilly and mountainous, whose breath-taking expanses don't fit on a poster, but in a bottle. With a lot of feeling and experience, the winemaker from the Swiss winery Cantina il Cavaliere ensures that his craft inspires and convinces you. Tasting note
Harmonious, complex and sophisticated on the palate. Alternative to pure Merlot grapes. As a young wine, it develops fragrant scents, dark berry, spicy bouquet. As a mature wine, it develops a slight note of black pepper.
Culinary recommendation
Goes well with a Ticino platter, a summer grill and cream cheese.
Vinification
Harvest by hand when the grapes are at their optimum ripeness. Gentle pressing and draining every 30 minutes in thermoregulated horizontal vinizers and vertical steel pans. The grapes are cold macerated for 8 hours in order to optimally develop their natural freshness and characteristic fruity scent. The mash is then heated to 26°C to extract the colour and start alcoholic fermentation. Several cycles of peel processing every day to soften the tannins. Transfer to thermoregulated stainless steel tanks for at least 6 months. Before bottling, the mash is filtered and assembled between the various steel pans.
