Culinary recommendation
It is ideal for light starters such as antipasti, summer salads or tapas. Its fine perlage and fresh aromas go particularly well with seafood, sushi or a fruity couscous salad. Even as a non-alcoholic aperitif, it is an elegant introduction to any menu.
Vinification
Gentle pressing of the grapes followed by decantation of the must. After fermentation at a controlled temperature (14-16°C), the wine matures briefly in steel tanks to highlight and preserve the natural freshness of the grapes. At the end of aging, cold decollation begins using a new membrane technology, which gently removes the alcohol and leaves the scents and aromas of the original wine unchanged.
