Tasting note
The Franciacorta Dosage Zero from Ca'del Bosco is not only one of those Italians who can be compared to the most famous of champagnes because of its exceptional fineness and complexity. Even the elaborate design is only maintained in this form by the finest champagne manufacturers: The base wine, consisting of Chardonnay, Pinot Blanc and Pinot Noir, ferments and matures in barriques. After the second fermentation in the bottle, the Franciacorta Brut remains on the yeast for 3 years before it is “dégorgeage” and shipped. For Dosage Zéro, Zanella selects the most extractive wines, which of their own accord have sufficient density and harmony and can therefore completely dispense with the usual dosage d'exportation (addition of sugar liqueur).

Vinification
Ein paar Worte zur Vinifikation: Der Franciacorta Dosage Zero von Ca'del Bosco ist nicht nur nach der aussergewöhnlichen Feinheit und Komplexität einer jener Italiener, die sich mit den berühmtesten unter den Champagnern vergleichen lassen. Auch die aufwendige Machart wird nur noch von den feinsten Champagner-Herstellern in dieser Form gepflegt: Der Grundwein, bestehend aus Chardonnay, Pinot Blanc und Pinot Noir, gärt und reift in Barriques. Nach der 2. Gärung in der Flasche bleibt der Franciacorta Brut 3 Jahre auf der Hefe liegen bevor er zur Dégorgeage und zum Versand gelangt. Für Dosage Zéro macht Zanella eine Auslese der extraktreichsten Weine, die von sich aus genügend Dichte und Harmonie mitbringen und somit gänzlich auf die übliche Dosage d'exportation (Zugabe von Zuckerlikör) verzichten können.
