Tasting note
Bright straw yellow with golden reflections. On the nose, characteristic bouquet of bottle fermentation with delicate notes of honey and ripe fruit, including yellow peach, classic butterscotch notes, nut aromas, some almonds and hints of bread crust. Crunchy, precise on the palate, with dense mousse and mineral notes. Long-lasting, with a firm yet velvety structure.
Vinification
The small boxes of Chardonnay are left in a cold room with a temperature of 4°C for 24-36 hours, cooling the grapes to 10°C to improve the extraction of varietal aromas. The chilled grapes are pressed, where a gentle whole grape pressing is carried out, in which no more than 60% of the free must is obtained. Fermentation takes place slowly at 15-17°C to preserve the aromas of the grape variety. The base wine matures in stainless steel tanks for around 7 months and is bottled in May.
