Tasting note
Rich and creamy foam and fine perlage. The color like pink peach blossom. On the nose, fragrant and very complex components, notes of cranberry, lychee and citrus fruits, nice minerality. On the palate, the wine stands out for its balance and power, supported by a good interplay between acidity, minerality and fruit.
Culinary recommendation
Our recommendation: Drink this sparkling wine at slightly chilled 10°-12°C. Recommended by Flaschenpöstlern: Franciacorta 61 NATURE Millesimato Rosé is ideal with fish dishes, appetizers and oysters.
Vinification
Cold pre-maceration for around 24 hours, followed by gentle pressing for the vinified Pinot Noir in pink. Then 6 months in contact with yeasts. A small portion of Pinot Noir is vinified in red with fermentative maceration for about 7 days. The cuvée is prepared in spring after the harvest, exclusively with wines from the same vintage. Second fermentation in the bottle and subsequent refinement on the yeasts for at least 5 years, followed by a further 6 months after disgorgation. Dosage zero means no addition of liquor and/or wine and sugar solution.
