About the wine
If we can offer something special for Christmas 2021, it's this provocative Sauvignon Blanc 2019 Fourth Dimension Dry Withe Protected Geographical Indication Slopes of Paiko. The winemaker from the Greek winery Kechris Winery grows this wine in the countryside in Macedonia. Tasting note
Bright yellow color with golden reflections. Complex aromas of citrus and ripe honeydew melon with a touch of mango and pineapple against a background of vanilla and butter. In the mouth, the fresh acid provides vitality and balances the greasy character of the wine remaining in the fine yeasts.

Vinification
Both varieties are harvested when fully ripe and pressed separately. A first maceration period is followed by fermentation exclusively in oak barrels and under controlled conditions. Before bottling, the wine is aged for six months in oak barrels and in fine yeasts with regular bâtonnage.
