The “Arpent” was an old French area measure of approx. 0.34 ha. In the case of Flavia, the name refers to a single layer whose soils have a reddish tint due to a large amount of iron. As noted on the label, this cuvée mainly focuses on Meunier (60%) and Chardonnay (40%), but, although not mentioned, insiders know that there is usually also a small portion of Pinot Noir, which also grows on this small plot of land. Aged on lees in used 300 liter barrels. Flavien has refrained from filtration, stabilization and also the addition of sulfur. The second fermentation takes place with our own grape juice instead of sugar. On the nose, fruity and spicy aromas of juicy cherries, orangeate, apple-nut crumble and a touch of fine cocoa, mineral-spicy with a subtle mussel shell note. On the palate, with a wonderful balance of citric freshness, creamy nutty seasoning and delicate salt tones in the finale.
