About the wine
With this provocative Sauvignon Blanc 2021 — Ficheto Bianco, the term taste takes on a new meaning. The winemaker from the Italian winery Masseria Borgo dei Trulli has absolutely mastered his craft. Elegance and finesse are the characteristics of this white wine, which originates in the fertile and flourishing landscape in Puglia. Tasting note
The wine is pale yellow in color and shows aromas of tropical fruits with a hint of vanilla. The palate is subtle and soft, with an elegant and complex citrus aroma and a long and persistent finish.
Culinary recommendation
Goes well with freshwater fish, poultry and vegetables.
Vinification
Each grape variety is vinified separately. After careful destemming, the grapes are not pressed, but remain on the skins for 24 hours at 10°C for maceration to improve the extraction of the fine aromas. The grapes are then gently pressed and about 60% of the clarified must is placed in stainless steel fermentation tanks. Fermentation takes place with selected yeasts at a controlled temperature of 16°C and lasts about 10 days. The remaining 40% is stored in new French barriques together with selected yeasts for barrel fermentation. It is then left on the lees for 5 months to extract a maximum of flavors.
