About the wine
The name comes from one of the landlord's favorite horses, Armand Schuster de Ballwil. When he was looking for a suitable name for the wine, the Ross Favory rumbled vehemently at the stable door with its hooves. “That's when I knew how to name this Crémant.” The term Crémant was introduced throughout France when Champagne winegrowers successfully prevailed in banning the globally common name Méthode Champenoise to characterize bottle fermentation.
