Tasting note
Bright yellow with golden reflections. Aromas of ripe exotic fruits, apricots, peaches, candied oranges and tangerines. Aromatic, balanced and soft with a beautifully integrated acidity. Long and fruity aftertaste.
Culinary recommendation
Great with grilled fish, scallops or seafood. Chicken dishes with Asian seasoning, such as ginger or curry, also harmonize perfectly with its aromatic richness. It also accompanies vegetarian dishes with truffles, spinach or stone fruit as well as creamy soft cheeses such as Reblochon or Gorgonzola in a particularly harmonious way.
Vinification
The grapes are picked by hand and carefully selected. Complete destemming is followed by a 12-hour maceration period at a cool temperature. This is followed by cold stabilization at 8° C. lasting five days with regular stirring. Some of the must is removed and fermented in concrete tanks at 18°C. Around 15% of wine undergoes biological acid degradation. The aging takes place on fine yeast with regular stirring until Christmas. Finishing, filtration and bottling take place in March.
