Vinification
Selectively harvest both grape varieties by hand in accordance with the biodynamic calendar. The grapes rest in the cellar for one night, followed by spontaneous fermentation with the vineyard's own yeasts of approx. 75% destemmed berries and 25% whole grapes in open, used and new wooden barrels, aged for 12 months in used and new 300L oak barrels. Only 1,200 bottles are produced.
