Tasting note
Made from Nebbiolo grapes that have dried out for three months - as in Sforzato production - Elite is an absolute and total wine in its complex range of perceptions, intense in scents ranging from caramel to chestnuts, from wilted flowers to cocoa. On the palate, body, harmony and a long finish complement the picture of a sumptuous and distinctly territorial product. A great wine for great moments, which is ready to drink even in its youth but becomes unforgettable after years of refinement when the aromas become more penetrating and warming and the taste fuller and rounder.
Culinary recommendation
Goes well with red meat, venison dishes and also as a dessert, with mature cheese.
Vinification
The Nebbiolo grapes for the elite dry on wood grates in the historic Fruttaio with regulated humidity and are vinified from the end of January. This wine was designed to be enjoyed when full of fruit. This is why the aging takes place in small barrels of one hundred and ten liters, which has deliberately accelerated the aging process and has already brought great recognition to his youth.
