Tasting note
Deeply concentrated color with an aroma of ripe red currants, red plums and soft woody notes that continue on the palate with black cherries. Balanced, leathery tannins with an elegant, spicy finish.
Culinary recommendation
It goes great with grilled rib-eye steak with parsnip puree, braised lamb shoulder with fried vegetables and tomato jam, or with a wild mushroom risotto with black Malabar pepper and sage.
Vinification
Rooted in the oldest wine-growing soil in the world, which consists of decomposed granite on the higher slopes of the Helderberg, a location that has proven its worth as a Grand Cru site. This vineyard enjoys the refreshingly cool False Bay (Atlantic Ocean) breezes during the day and cool night air flowing down the mountain, resulting in uniform maturation and good natural acidity. The macroclimate is maritime with cold winters and sunny, warm summers. This wine is produced naturally and biodynamically using no commercial yeasts, enzymes or fining agents. It is also not filtered or cold-stabilized and may therefore have harmless deposits over time. The Ekliptika was aged for 24 months in 70% new and 30% used French oak barrels.
