Tasting note
This wine has a burgundy color. The nose offers wonderful aromas of ripe berries, complemented by nuances of dark chocolate, tobacco and subtle spiciness. These aromas continue on the medium-bodied palate, where they are complemented by aromas of mulberries, violets and some spicy nuances. The tannins are soft and beautifully integrated, balanced by a delicious freshness on the finish.
Culinary recommendation
Goes well with Catalan coca and small tapas.
Vinification
The grapes for this wine are grown in the cool climate of the Constantia Valley, all on the Eagles' Nest wine farm, on steep mountain slopes at an altitude of 100 to 400 meters. All grapes were picked by hand, sorted and then pressed into various small to medium-sized open fermenters. Pumping took place three to four times a day. After fermentation, the wine was transferred to a combination of 225 French oak barrels of the first, second and third bottling, where it aged for 18 months. After barrel aging, selected components were transferred to the tank and blended together to form a multi-layered and complex wine.
