Vinification
In small French tonneaux with purely manual pomace wetting. Controlled fermentation temperature of max. 27° due to night coolness. Maceration for 15-20 days. Ageing for 18 months in French barriques, of which 50% are new, with periodic bâtonnage of the yeast trunk. Clarification is carried out exclusively by decantation, bottling takes place without sterile filtration. This is followed by maturation on the bottle for at least 18 months.
