Tasting note
The Fondrèche Blanc is bright lemon yellow. On the nose, fresh aromas of citrus fruits, passion fruit, peaches, grapefruits, some ginger and white flowers inspire. On the palate, the wine is invigorating, intense and juicy with lots of citrus fruit, a touch of honey, a noticeable minerality, a strong acidity and a long-lasting, slightly salty finish.

Goes well with Provençal specialities, grilled fish, scallops, sushi, vegetable gratin, aromatic starters
Vinification
The vines grow on calcareous soils and are cultivated according to ecological principles. After manual harvesting, the grapes are cold macerated and fermented in steel tanks at cool temperatures. No sulfur is added during vinification. The separate aging takes place in steel tanks on fine yeast for 6 months. Only the Rousanne is aged in large wood. This is followed by assemblage and bottling.
