Tasting note
Sein beispielloses Purpurrot ist das i-Tüpfelchen jedes besonderen Abends. Ihre Gäste werden es Ihnen bestätigen. Ein fruchtiger Rotwein mit kräftigem Körper und markanter Säure, welcher ausgewogen mit fein ausgebauten Tanninen auf Zunge und im Gaumen seine komplexe Struktur entfaltet.
Culinary recommendation
Goes well with foie gras, kidneys, braised meat, beef, lamb, dove, black truffle, porcini mushrooms, venison medallions and mushroom risotto. Also with primarily light soft cheeses.
Vinification
For many years, the entire winery has been managed according to environmentally friendly principles and is certified according to biodynamic guidelines. The ripeness of the grapes is regularly monitored shortly before harvesting in order to determine the optimal harvest time. The harvest amount is strictly limited to guarantee the highest quality. The harvest is picked by hand and sorted out after arrival in the cellar to keep only the best berries. After gentle pressing, alcoholic fermentation takes place for approx. 3 weeks. The wine is aged on fine yeast in oak barrels.
