Vinification
The grapes are harvested and selected by hand; upon arrival in the cellar, the best berries are carefully sorted out. The harvest results in low yields and the grape harvest is partially or completely destemmed. This is followed by a long maceration and aging in oak barrels for 16 to 18 months.
