Tasting note
The purity of the fruit is the most distinctive characteristic of this wine. It comes from high-altitude Sauvignon Blanc vineyards close to the Atlantic. Citrus and lime notes pave the way for tropical fruits on the mid-palate with lively notes of passion fruit and gooseberry. This award-winning Sauvignon Blanc is powerful and elegant at the same time and combines focus and complexity.
Culinary recommendation
Goes very well with full-bodied seafood dishes and creamy soup or spicy fried fish.
Vinification
This focused and refined wine is pressed from Diemersdal's highest vineyard plots, from where you can see Table Mountain and False Bay. The manual harvest of the limited quantities of fruit ensures the true expression of the Sauvignon Blanc from Diemersdal, which is grown unwatered. Harvested from a selected block at 23-24ºÖchsle. Bruised and reductively destemmed. Skin contact for 12 hours, pressed and discontinued for 36 hours. Squeezing and inoculating with selected yeast, vin 7. 3 weeks of alcoholic fermentation at a controlled temperature of 14-16°C. After fermentation, 5 months of yeast contact, stirred once a week to improve mouthfeel and concentration. This wine was made with minimal intervention and deposits can form over time.
